Apple and Raspberry Crumble Pie

IMG_6211As Christmas is approaching quickly, this dessert looked like one I could make for Xmas Dinner. I have adapted the recipe from the “Hey, cakes!” delightful blog,  swapped the cranberries for raspberries and added more chocolate (what can I say ? I am a chocolate fan ! ). The pie lasted only 3o minutes outside of the oven before someone came and took a slice … I must say this pie is delicious while still warm, and would go perfect with vanilla ice cream or whipped cream … but hey .. let’s not push it …

Ingredients:

For the Crust & Toppings:
– 2 cups of all purpose flour
– 1/2 cup of granulated sugar
– 1/2 cup of brown sugar (cassonade)
– 200g of cold butter (1/2 & 1/3 cup)
– 80g (2/3 cup) of chocolate
– 50g (1/3 cup) of white chocolate
– 1/2 tsp of salt

For the Filling:
– 1 1/2 cup of raspberry (or any berry you’d like)
– 2 apples, sliced
– 2 eggs
– 1/2 cup of granulated sugar
– 1 tsp of vanilla extract (1 sachet de sucre vanille)
– 1/3 cup of all purpose flour
– 1/2 cup of sour cream
– 1/2 tsp of cinnamon
– 1/2 tsp of salt

Directions:

  1. Oil a pie pan and pre heat the oven to 170 degrees C (340 degrees F)
  2. In a big bowl, add flour, granulated and brown sugar, salt and cubes of cold butter and mix using your fingers until well combined and “crumbly”.
  3. Put aside 1 1/2 cup of the mix, and use the remaining mixture for the crust: cover the bottom of your pie dish by firmly pressing the mixture.
  4. Put in the oven for 15min.
  5. In another bowl, beat the eggs with sugar, vanilla extract, sour cream, flour , salt & cinnamon.
  6. Gently add the sliced apples and the raspberries.
  7. In the other bowl where we have the rest of the crumble mixture, add the 2 chocolates & mix.
  8. Once the crust is cooked, remove from the oven and pour the apple/raspberry filling on top of the crust.
  9. Sprinkle the crumble mixture over the filling.
  10. Bake for 45 minutes until the top get a nice golden colour
  11. Let it cool in the pie dish before turning over and serving.
